I think as I grow older I start to appreciate the variety of food California has to offer. You want Indian food? It's right down the corner. Feeling Falafel? " This place has some of the best!"
I have friends from all over the States and they always tell me the same thing, "The food here isn't authentic.." I do think it depends on the restaurant and how they cook. However, I do have to say it doesn't really make sense to me when they say that. As someone in the restaurant business the way I think is different. You can never get real authentic food if you don't eat it from the specific country. It's just like someone moving to another country, city or state. You have to adapt to changes.
Everyone has a different taste bud but there's a general taste people tend to like when living in a certain country. For example, Americans tend to like salty and sweet. Whereas other places might like something bitter. Why do you think McDonald's has a differentiated menu throughout the world. So, when living in America we have to adapt to those changes or any place. A great example is my parent's restaurant. We have people coming in and out everyday enjoying our food.
We don't expect everyone to enjoy the food but to some extent people have to like it for us to be open. First off our restaurant uses Thai chili which measures at 50,000-100,000 Scovilles Units. That is pretty dang hot! We love spice, everything in our dish contains spice that is the "authentic" way of eating. People want to get all feisty asking for super spicy so we're just realistic and add maybe two to three peppers. BUT NOPE, not spicy enough can you please add more! Okay, no problem. We add just one more pepper to get that tangy spice and all of a sudden it's too spicy. Truth is nothing can be authentic because some people can't handle it. I'm not talking about everyone but generally. I can give you a million and one foods that are served in the U.S that are no where close to tasting like they do in the origin country. I guess this is a rant about people having too much expectation and to the people that complain at a restaurant for the smallest reasons. The customer is always right but sometimes you just want to wack them in the head! lol not literally.
